LECITHIN is a naturally occurring group of phospholipids that’s found in nearly every living cell. Though the word lecithin is derived from GREEK LEKITHOS, which mean yolk of an egg’. The Primary commercial source of lecithin comes from oilseeds like soya, sunflower and corn.
The chemical term of lecithin mean lipids containing phosphoric acid residue,they are natural surface active agents.
Commercial lecithin is an important co product of edible oil processing,because of its dietary significance and multifaceted functionality in food system and industial application.
